Zingy Lemon Squares

For lemon lovers! This cake is moist and lemony. It keeps for days if you can stop eating it…


Ingredients

  • 130 gr of Flour
  • 70 gr Coconut Sugar
  • 1/4 tsp of Baking Powder
  • 1/4 tsp of Salt
  • 1 Lemon (zest and juice)
  • 70 gr Butter
  • 2 Eggs
  • 1 cup of Powder Sugar
  • 1/2 Lemon juice
  • 2 tbsp of Lemon zest

Heat the oven to 170°C. Mix the flour with the sugar, baking powder and lemon zest. Add the butter and lemon juice. Whisk well. Add the egg and whisk until creamy. Cover a square tin with baking paper and spray oil over. Pour the cake mix into the tin. Place in the oven and bake for 20 minutes. In the meantime, prepare the glazing. Mix the powder sugar, lemon juice and lemons zest and stir until it is smooth. Remove the cake from the oven. Pour over the glaze and wait until it sets before removing the cake from the tin.

French Crepes

Crepes with Honey and Cinnamon

Perfect for breakfast or as a dessert, this French speciality is easy and quick to prepare.


Ingredients

  • 125 gr of Flour
  • I250 ml of Milk
  • 2 Eggs
  • 50 gr of Butter
  • a pinch of Salt

In a bowl place the flour and the salt. Add the eggs and whisk. Pour in the milk slowly whilst whisking until it becomes a soft batter. Let it rest for 15 minutes. Melt the butter in a frying pan and add it to the batter. Whisk until it blends. Heat up the frying pan. Pour in a small ladle of batter in the middle of the pan. Spin the pan gently in circular moves to spread the batter. Let it cook for 3 to 4 minutes, then flip and cook on the other side. Carry on the same process and you ran out of batter. Serve with honey, a squeeze of lemon juice and cinnamon powder.

Creamy Rice Pudding

Creamy Rice Pudding

Delicious creamy dessert. Can be serve warm but it is at it’s best straight out of the fridge. Cinnamon gives it a special touch.


Ingredients

  • 75 gr of Shrimp
  • 1 lt of Milk
  • 80 gr of Sugar
  • 1 Lemon peel
  • 1 Cinnamon Stick
  • Cinnamon powder
  • 4 Eggs
  • Salt

Place the rice in a pot and cover with water. Add a pinch of salt, the lemon peel and the cinnamon stick. Cook until the water evaporates. Heat up the milk and add to the rice slowly. Add the sugar and stir. Bring to boil and simmer for 2 minutes. Remove from the heat. Let it cool down. Remove the lemon peel and the cinnamon stick. Add the yolks and stir until it blends. Put back on the heat and stir until it thickens. Pour into a bowl and sprinkle with cinnamon powder. Let it cool down and place in the fridge.

Rum Cake with Caramel Drizzle

It looks like a normal pound cake but it is so much more!! Buttery, moist and boozy… No more words needed!


Ingredients

  • 2 Eggs
  • 180 gr of plain Flour
  • 1/2 tsp of Salt
  • 2 tsp of Baking Soda
  • 1/2 tsp of Baking Powder
  • 113 gr of Butter
  • 1/2 double Cream
  • 1/2 Vanilla bean
  • 100 gr of Sugar
  • 75 gr of Butter
  • 1/2 cup of Rum

Pre-heat the oven to 180° C. Whisk the eggs with the sugar. Add the butter and whisk until creamy. Add the flour, baking powder and baking soda. Slice the vanilla bean lengthwise and scrape the vanilla into the cake mix. Add the cream and stir gently. Grease a round cake tin and sprinkle with flour. Pour in the cake mix. Place in the oven and bake for 45 minutes.

Prepare the caramel by heating the butter, rum and sugar. Stir until the sugar dissolves completely. Let it simmer for a couple of minutes.

Remove the cake from the oven. Gently slide the cake out of the tin. Make several holes on the top using a toothpick. Slowly pour the caramel over the cake.

Tiramisu

An undisputed king of desserts, this Italian classic will make you cry for more.


Ingredients

  • 3 Eggs
  • 250 gr of Mascarpone Cheese
  • 80 gr of Sugar
  • 150 gr Sponge Fingers
  • 300 ml of strong hot Coffee
  • 50 ml of Rum
  • Cacao powder

Whisk the eggs with the sugar until it becomes a creamy white mix. Add the mascarpone and half the rum and mix well. Mix the hot coffee with the rest of the rum and wait until it is luke warm. Quickly soak the sponge fingers and place a layer in a tray. Cover with the mascarpone cream and repeat alternating layers of sponge fingers and cream. Finish with a layer of cream. Sprinkle with the cacao powder and place in the fridge for at least 2 hours.

Crème Brûlée

Crème Brûlée

A guaranteed success at any dinner party. It requires patience although it is quite simple to make.


Ingredients

  • 5 dl of double Cream
  • 50 gr powdered Sugar
  • 5 Egg yolks
  • 1/2 Vanilla pod
  • 50 gr demerara Sugar

Divide the cream into two halves. Cut the vanilla pod lengthwise and scrape the seeds into one half of the cream. Warm the vanilla cream over slow heat. Whisk the yolks with the powdered sugar. Add the cold half of the cream and whisk. Add the warm cream and fold in gently. Heat the oven to 95°C. Pour the mix into indidual ramequins. Place in the fridge for 2 hours. Place the ramequins in a tray with water. Bake in the oven for about one hour, until the mix is floppy and just about solidified. Pour sugar over each ramequin and use a kitchen torch to caramelize the top.

Coconut Swiss Roll

Ingredients

  • 120 gr of Sugar
  • 125 gr dried Coconut
  • 115 gr of Butter
  • 6 Eggs

Whisk the sugar and butter in a cream. Add the eggs and whisk further. Add the coconut and fold it in. Pre-heat the oven to 180°C. Cover a tray with baking paper and spray with oil. Pour over the cake mix and spread evenly. Bake for about 10 minutes. Sprinkle a tea towel with coconut and turn over the cake into it. Remove the baking paper gently. Whilst it is still hot use the tea towel to roll over the cake. Press carefully on the last turn and let it cool down before serving.

Belgian Waffle

The best waffle recipe ever. Comes out perfect everytime. Add blueberries, nuts, cream, maple syrup or whatever else you like.


Ingredients

  • 1/2 tsp of dry Yeast
  • 1 cup of warm Water
  • 3 cups of Flour
  • 113 gr of Butter
  • 1/2 tsp of Salt
  • 1 cup of Milk
  • 2 Eggs

Dissolve the yeast in the warm water. Mix the flour and salt together in a bowl. Add the milk and the yeast and whisk. Separate the yolks from the whites. Add the yolks to the flour mix and whisk. Melt the butter and add to the mix. Whisk until it becomes a smooth batter. Whisk the egg whites into stiff peaks. Fold gently into the batter mix. Let it sit for 20 minutes. Heat up the waffle iron. Spray the plates with oil. Pour in one big spoon of batter. Close the iron and cook for about 4 minutes or until golden brown. Repeat until you run out of batter.

Baked Pears

This delicious baked pears make a sophisticated dessert in only 20 minutes. You can also leave in the fridge for up to two days and eat for breakfast or as a snack.


Ingredients

  • 4 Pears
  • 1 stick of Cinnamon
  • 1/2 cup of Demerara Sugar
  • 1/2 cup of Port Wine

Cut the pears in half, peel and remove pits and core. Heat the oven to 200° Celsius. Sprinkle the pears with the sugar. Add the cinnamon and pour the wine over the pears. Bake for 20 minutes or until golden brow
