Spicy Boiled Fried Eggs

Amazing colour and texture, this double cooked eggs are certainly worth a try…


Ingredients

  • 4 hard boiled Eggs
  • 4 Garlic cloves
  • Ginger
  • 1 Bay leaf
  • 4 tbsp of Extra Virgin Olive Oil
  • 2 red Chillies
  • 2 tsp Chilli oil
  • 1 bunch of Spring Onions
  • 2 tbsp dark Soy sauce
  • 1 tbsp Oyster sauce
  • 1/2 cup of Beer
  • Sunflower Oil

In a pot with salted water, boil the eggs for 15 minutes. Remove the eggs and place in a bowl with ice cold water for a couple of minutes. Peel the eggs carefully. Make a few very thin cuts on each side of egg. Heat the sunflower oil in a frying pan and fry the eggs until they are golden on all sides. Reserve. Peel and crush the garlic, peel the ginger and trim into a cube, open the chillies and remove the seeds, then cut into chunky pieces. Mix the beer with the soy an oyster sauce. Reserve. Heat the olive oil and chilli oil, add the garlic, ginger, bayleaf and chillies. Fry for 1 minute. add the eggs, stir for another minute. Add the beer mix and stir to mix well. Cover with a lid and cook for 5 minutes. Remove the lid and keep stiring until the sauce has thickened, about 5 minutes. Turn off the heat and sprinkle with the spring onions. Mix well and serve.

Roasted Crushed Potatoes

Delicious! Crispy on the outside and fluffy inside…


Ingredients

  • 500 gr baby Potatoes
  • 8 Garlic cloves
  • 1 Bay leaf
  • 1/4 cup of Extra Virgin Olive Oil
  • Rosemary sprigs
  • Himalaya Salt
  • Pepper

In a big pot with salted water, boil the potatoes for 10 minutes. Oil the bottom of a baking tray and place the potatoes on the oil. Crash each potato and add the garlic cloves with peel on. Drizzle the remaining oil over the potatoes. Sprinkle with salt and pepper. Spread the sprigs of rosemary over the top. Bake in hot oven (220°C) for about 40 min.

Pepper Tuna

Pepper Tuna

Cracked peppercorns give and a great spicy taste and looks amazing on the plate.


Ingredients

  • 2 Tuna Steaks
  • 1 Lemon
  • 2 tbsp dark Soy sauce
  • 1 tbsp Rice Vinegar
  • 1 tbsp Extra Virgin Olive Oil
  • 1 pinch of Salt
  • 2 Egg whites
  • 4 tbsp of Red and Black Peppercorns

Prepare a marinade by mixing the lemon juice, soy sauce, rice vinegar, olive oil and a pinch of salt. Pour over the tuna steaks and leave for several hours. Whisk the eggs whites until they become foamy. Crack the peppercorns with a pestle and mortar and place in a plate. Drain the tuna from the marinate. Pat dry with kitchen paper. Dip in the egg whites. Place over the peppercorns and cover on both sides. Place in baking dish. Pre-heat the oven to 200° C. Bake the tuna for 15 to 20 minutes.

Watercress Soup

Watercress Soup

Delicious and light, this soup is ready in no time. Perfect as a starter or as a light meal on the end of a busy day.


Ingredients

  • 1 Carrot
  • 1 Onion
  • 1 Leek
  • 1 Potato
  • 2 Garlic cloves
  • 3 tbsp of Extra Virgin Olive Oil
  • 1,5 lt Water
  • 50 of Watercress
  • 1 pinch of Salt
  • Pepper

Peel and cut into chunks all the vegetables except the watercress. Fill a pan with the water, add some salt and bring to boil. Add the vegetable chunks and olive oil. Cook for 20 minutes. Remove from the heat. Blend until smooth. Add the watercress and simmer for 5 minutes. Serve and drizzle with some olive oil.

Sechuan Aubergine

Sechuan Aubergine

Inspired by a well know Chinese recipe these aubergines are delicious with pasta or rice.


Ingredients

  • 2 Aubergines
  • Coarse Sea Salt
  • Sunflower Oil
  • 2 Garlic Cloves
  • 1 Ginger piece
  • 1 tsp Chilli paste
  • 2 tbsp of Extra Virgin Olive Oil
  • 61 tbsp Soy Sauce
  • 1 tbsp Rice Vinegar
  • 1 tbsp Balsamic Vinager
  • 1 tbsp Madeira Wine
  • Himalaya Salt
  • Pepper
  • 1 Bunch of Coriander
  • 2 Spring Onions

Cut the aubergines into cubes. Cover with salt and leave for 30 minutes. Rinse with cold water and tap dry with a tea towel. Heat up the oil. Fry the aubergines until golden brown. In a flat pan add the olive oil, crushed garlic, grated ginger, chilli paste. Heat up and keep stirring for 1 minute. Add the fried aubergine a stir until it is all blended. Add the madeira wine and let it simmer for a couple of minutes. Add the balsamic vinegar, rice vinegar and soy sauce. Stir and remove from the heat. Sprinkle with fresh chopped coriander and chopped spring onions.
