Courgette Sauté

Stir-fry Courgette

A lovely side dish that can also be added to rice or pasta for a complete meal.


Ingredients

  • 2 Courgettes
  • 1 Onions
  • 1 Bay leaf
  • 2 Garlic cloves
  • 100 ml of Extra Virgin Olive Oil
  • 20 gr of grated Parmesan Cheese
  • 1 pinch of Salt
  • Pepper

Cut the courgettes and onions into thin slices. Chop the garlic. Heat the olive oil. Add the onions, garlic and bay leaf. Let it turn golden. Add the courgettes and stir gently. Fry until the become soft and golden. Season with salt and pepper. Sprinkle the Parmesan and stir gently. Remove from the heat as soon as the cheese starts to melt.

Wild Mushrooms Risotto

Wild Mushrooms Risotto

The red wine gives it an intense flavour and colour.


Ingredients

  • 100 gr of Wild Mushrooms
  • 2 Garlic cloves
  • 2 tbsp of Extra Virgin Olive Oil
  • 160 gr arborio Risotto
  • 2,5 dl Red Wine
  • 2,5 dl Vegetable Stock
  • 1 tbsp Tomato Paste
  • 2 tbsp grated Parmesan cheese
  • 1 Bunch of Parsley
  • 1 pinch of Salt
  • Pepper

Peel and chop the garlic. Heat the olive oil and add the Bay leaf. Fry the garlic until golden. Add the rice and stir until it becomes translucent. Pour in the wine and let it boil. Turn down the heat and simmer for 10 minutes. Stir occasionally and add the vegetable stock bit by bit. Add the mushrooms and cook for a few more minutes, stirring frequently. Add the tomato paste and the parsley cut finely. Season with salt and pepper. Stir for another 2 minutes. Turn off the heat and add the grated parmesan. Stir and serve.

An undisputed king of desserts, this Italian classic will make you cry for more.


Ingredients

  • 3 Eggs
  • 250 gr of Mascarpone Cheese
  • 80 gr of Sugar
  • 150 gr Sponge Fingers
  • 300 ml of strong hot Coffee
  • 50 ml of Rum
  • Cacao powder

Whisk the eggs with the sugar until it becomes a creamy white mix. Add the mascarpone and half the rum and mix well. Mix the hot coffee with the rest of the rum and wait until it is luke warm. Quickly soak the sponge fingers and place a layer in a tray. Cover with the mascarpone cream and repeat alternating layers of sponge fingers and cream. Finish with a layer of cream. Sprinkle with the cacao powder and place in the fridge for at least 2 hours.
