Battered Pineapple

A fried fruit desert or treat with a delightful juicy sweetness…


Ingredients

  • 1/2 cup Flour
  • 1 tsp Baking Powder
  • 2 tbsp demerara Sugar
  • 2 eggs
  • 2 tbsp Creme Fraiche
  • 1 tbsp Lemon juice
  • 1 tbsp melted Butter
  • 1 Pineapple
  • Sunflower Oil

Peel the pineapple and cut it into cubes. In a bowl, whisk the eggs and sugar. Add the remaining ingredients and whisk until it is all blended into a smooth batter. Add the pineapple to the batter and gently mix it. Heat the oil. Spoon the pineapple chunk in small batches. Fry until golden brown.

Ingredients

  • 200g cooked Whelk
  • 1 Onion
  • 1 Parsley bunch
  • 1/4 cup mixed Pickkes
  • 1/4 cup Olive oil
  • Pepper
  • Salt
  • 4 tbsp White Wine Vinager

Chop the onions, garlic, parsley and pickles. Prepare the whelks by removing the inner black tube and cutting into small pieces. Add to tge onion mix. Season with salt and pepper. Add the olive oil and vinager. Mix it all in a bowl cover with cling film and keep in the refrigerator.

Parmesan Omelette

A tasty omelette that is ready in no time… For those evenings when you are too tired to decide what to cook.


Ingredients

  • 4 eggs
  • 1 tbsp Soy sauce
  • 1/4 cup grated Parmesan
  • 2 tbsp chopped Parsley
  • 1 tsp Chilli flakes
  • Pepper
  • 2 tbsp Olive oil

Whisk the eggs. Season with the soy sauce, pepper and chilli flakes. add the chopped parsley and grated parmesan. In a large frying pan, heat the olive oil. Pour in the eggs and swirl to spread the eggs into a pancake shape. Cook for abour 3 minutes until it starts to solidify. Gently lift the sides with a spatula and fold one third into the middle, then again over the other third. slide into a serving plate.

Waldorf Salad

This world famous salad is a delicious mix of lettuce, fruit and walnuts, with an amazing sauce.


Ingredients for the Salad

  • 1 Iceberg Lettuce
  • 3 Celery stalk
  • 1 Apple
  • 1/2 cup Wallnuts

Ingredients for the Sauce

  • 1/2 cup Mayonnaise
  • 1 tsp Dijon Mustard
  • 1 Lemon (juice)
  • Salt
  • Pepper

Peel the celery stalks and cut in chunky pieces. Roughly break up the lettuce leafs. Peel the apple and cut into small cubes. Break the walnuts into halves. Place all the salad ingredients in a bowl and gently mix. For the sauce, whish all the ingredients until blendedijto a smooth cream. Pour the sauce over the salad and decorate with a few more walnuts.

Peas with Poached Eggs

Peas Stew with Poached Eggs

A very tasty, yet simple to prepare, pea stew. The eggs add some extra protein but can be left out if you want a fully vegan stew.


Ingredients

  • 500 gr of peas
  • 1 onion
  • 1 tin of chopped tomatoes
  • 1 garlic clove
  • 1 tbsp tomato paste
  • 4 tbsp olive oil
  • 1/2 fennel bulb
  • 1 Bay leaf
  • salt
  • black Pepper
  • 4 eggs

Chop the onion and the fennel and fry with the olive oil until golden. Add the peas and cook for 2 minutes. Add the tomato and season with salt and pepper. Bring it to a boil and let it cook until peas haven soften up.

Gently make space by removing the peas to one side of the pot and pour in the egg. Repeat until all eggs are in and cover with a lid. Lower the heat and cook until the eggs are cooked to your taste.

Eggless Fruit Cake

Ingredients

  • 115 gr of Flour
  • 1 tsp of Baking Soda
  • 1 tsp of Baking Powder
  • 1/4 tsp of Salt
  • 2 tbsp of Molasses
  • 1 tsp of Cinnamon
  • 1 tsp of Aniseed powder
  • 40 grs of Orange candied peel
  • 40 grs candied Cherries
  • 40 grs of Almonds
  • 40 grs of Pistachios
  • 20 grs of Sultanas
  • 20 grs of Goji berries
  • Black Tea
  • Oil spray

Prepare a strong black tea brew. Cover the candied fruits, sultanas and goji berries with the tea and let it soak for about one hour. Heat the oven to 170°C. Mix the flour with the baking powder and baking soda. Add the cinnamon and aniseed powder. Drain the fruits and pat dry with a paper towel. Keep tea on the side. Chop coarsly the soaked fruits, pistachios and almonds. Add the molasses and all the fruits to the flour mix. Whisk and add a little bit of tea if it is too dry. The dough should be thick but quite moist.
Cover a rectangular cake tin with baking paper. Spray with oil and sprinkle with a little bit of flour. Pour in the cake mix and flatten the top gently. Bake for 30 to 40 minutes until golden on top and firm to touch. Let it cool down inside the tin. Slice gently and keep in a biscuit tin.

Parmesan Cauliflower

Parmesan Cauliflower

Salty and sweet, this way to prepare cauliflower is as simple as it can be.


Ingredients

  • 1 Cauliflower head
  • 3 tbsp of Extra Virgin Olive Oil
  • 2 tbsp of grated Parmesan Cheese
  • Pepper

Break the cauliflower into florets ad cut those lengthwise in half. Cover a tray with baking paper. Place the cauliflower on the tray and drizzle with the olive oil. Sprinkle with freshly grounded pepper. Heat the oven to 200°C. Bake the cauliflower for 20 minutes. Remove the tray from the oven and sprinkle the grated cheese over the cauliflower. Lower the oven temperature to 180°C and bake the cauliflor for 5 to 10 minutes until golden brown.

Watercress Soup

Ingredients

  • 1 Carrot
  • 1 Onion
  • 1 Leek
  • 1 Potato
  • 2 Garlic cloves
  • 3 tbsp of Extra Virgin Olive Oil
  • 1,5 lt Water
  • 50 of Watercress
  • 1 pinch of Salt
  • Pepper

Peel and cut into chunks all the vegetables except the watercress. Fill a pan with the water, add some salt and bring to boil. Add the vegetable chunks and olive oil. Cook for 20 minutes. Remove from the heat. Blend until smooth. Add the watercress and simmer for 5 minutes. Serve and drizzle with some olive oil.

Lemony Prawn Salad

Lemony Prawns Salad

A fresh summery salad with a hint of Thai flavours. The secret is in the sauce, the best virgin olive oil and the juiciest lemon.


Ingredients

  • 300 gr of Prawns
  • 1 Lemon
  • 3 Spring Onions
  • 1 Coriander Bunch
  • 100 ml of Extra Virgin Olive Oil
  • 1 pinch of Salt
  • Pepper

Boil a pot of water seasoned with coarse salt. Cook the prawns for 10 minutes. Remove from the water and let it cool down. Peel the prawn skins, cut into pieces and reserve. In a blender mix the olive oil, lemon juice and season with salt and pepper. Blend until it become a thick and smooth mixture. Chop the spring onions and coriander. Place the prawns in a serving bowl and add the coriander and spring onions. Pour the lemon sauce over the prawns and stir. Serve straight away or keep in the fridge until required.
