Roasted Crushed Potatoes

Delicious! Crispy on the outside and fluffy inside…


Ingredients

  • 500 gr baby Potatoes
  • 8 Garlic cloves
  • 1 Bay leaf
  • 1/4 cup of Extra Virgin Olive Oil
  • Rosemary sprigs
  • Himalaya Salt
  • Pepper

In a big pot with salted water, boil the potatoes for 10 minutes. Oil the bottom of a baking tray and place the potatoes on the oil. Crash each potato and add the garlic cloves with peel on. Drizzle the remaining oil over the potatoes. Sprinkle with salt and pepper. Spread the sprigs of rosemary over the top. Bake in hot oven (220°C) for about 40 min.

Parmesan Omelette

A tasty omelette that is ready in no time… For those evenings when you are too tired to decide what to cook.


Ingredients

  • 4 eggs
  • 1 tbsp Soy sauce
  • 1/4 cup grated Parmesan
  • 2 tbsp chopped Parsley
  • 1 tsp Chilli flakes
  • Pepper
  • 2 tbsp Olive oil

Whisk the eggs. Season with the soy sauce, pepper and chilli flakes. add the chopped parsley and grated parmesan. In a large frying pan, heat the olive oil. Pour in the eggs and swirl to spread the eggs into a pancake shape. Cook for abour 3 minutes until it starts to solidify. Gently lift the sides with a spatula and fold one third into the middle, then again over the other third. slide into a serving plate.

Courgette Sauté

A lovely side dish that can also be added to rice or pasta for a complete meal.


Ingredients

  • 2 Courgettes
  • 1 Onions
  • 1 Bay leaf
  • 2 Garlic cloves
  • 100 ml of Extra Virgin Olive Oil
  • 20 gr of grated Parmesan Cheese
  • 1 pinch of Salt
  • Pepper

Cut the courgettes and onions into thin slices. Chop the garlic. Heat the olive oil. Add the onions, garlic and bay leaf. Let it turn golden. Add the courgettes and stir gently. Fry until the become soft and golden. Season with salt and pepper. Sprinkle the Parmesan and stir gently. Remove from the heat as soon as the cheese starts to melt.

Rainbow Chard Fritters

Colour and delicious, this vegetable dish is sure to please even the most picky eaters.


Ingredients

  • 200 gr of Rainbow Chard
  • 1 Onion
  • 4 tbsp of Breadcrumbs
  • 3 tbsp of Parmesan Cheese
  • 1 tsp of Mustard powder
  • 1 tsp Cumin powder
  • 1 tbsp Coriander seeds
  • 1 tbsp of fresh chopped Coriander
  • 1 tbsp dried Garlic
  • 1 tsp of Chilli paste
  • 2 Eggs
  • 1 bunch of Dill
  • 2 tbsp of Extra Virgin Olive Oil
  • 1 pinch of Salt
  • Pepper

Boil a pot of water seasoned with coarse salt. Cook the Chard for 5 minutes. Remove from the water, drain and chop into small pieces. In a big bowl add all the ingredients. Mix well until it is well blend. Use your hands to form paties. Heat the olive oil and fry the paties until golden brown on both sides.

Cabbage and Beans Soup

Hearty soup that is perfect for when you need a boost of healthy food.


Ingredients

  • 1 Savoy Cabbage
  • 2 Potatoes
  • 1 Turnip
  • 2 Carrots
  • 1 Onion
  • 1 tin of Pinto Beans
  • 2 tbsp of Extra Virgin Olive Oil
  • 1 /2 a cup of Penne pasta
  • 1 lt of Water
  • 1 pinch of Salt

Peel and chop the onion finely. Peel the potatoes, carrots and turnip and cut into cubes. In a pot heat the olive oil and add the onion. When the onion becomes translucent add the carrots, potatoes and turnip. Let it cook for a few minutes. Add the bean including the water from the tin. Stir and let it start boiling. Season with salt. Add the remaining water and let it cook until the potato’s are soft. Add the pasta and cook for 10 minutes. Cut the cabbage into chunks and add to the pot. Cook for another 5 to 10 minutes.

Bell Pepper Salad with Parsley Dressing

Ingredients

  • 1 red Bell Pepper
  • 1 orange Bell Pepper
  • 1 yellow Bell Pepper
  • 1 Lemon juice
  • 2 Garlic cloves
  • 1 Parsley Bunch
  • 100 ml of Extra Virgin Olive Oil
  • 1 pinch of Salt
  • Pepper
  • 1 tbsp of Poppy seeds

Clean the peppers of seed and cut into cubes. In a blender put the parsley, garlic, lemon juice, olive oil, salt and pepper. Blend until we’ll mixed. Pour over the peppers and stir. Sprinkle with the poppy seeds.

  • 3 Beetroots
  • 1 Potato
  • 1 tbsp Mayonnaise
  • 2 tbsp of Guerkin preserve liquid
  • 1 pinch of Salt
  • Pepper

Boil a pot of water seasoned with coarse salt. Peel the beetroot and potatoes. Cook in the boiling water until soft. Drain and mash with a potato masher. Season with salt and pepper. Add the mayonnaise and gherkin liquid and stir.

Boil a pot of water seasoned with coarse salt. Cook the spinach for 5 minutes. Drain an Chop finely. Peel the garlic and chop in small pieces. Heat the olive oil and add the garlic and bay leaf. Let the garlic turn golden brown and add the spinach. Stir and let it cook for a few minutes. Season with salt and pepper. Add the vinegar and stir.

Ingredients

  • 1 tin of Black Eye Peas
  • 1 Shallot
  • 1 tbsp Chives
  • 1 Parsley Bunch
  • 100 ml of Extra Virgin Olive Oil
  • 4 tbsp White Wine Vinager
  • 1 pinch of Salt
  • Pepper

Open the tin and drain the water from the black eye peas tin. Rinse with cold water and place in a salad bowl. Peel the onion and chop the onion, chives and parsley very finely. Add to the black eye peas and stir. Add the olive oil and vinegar. Season with salt and pepper and stir gently.
