Guacamole

Guacamole

A party favourite that can be served as dip, side or sauce.


Ingredients

  • 2 Avocados
  • 1 Lemon
  • 3 Spring Onions
  • 3 dried Tomatoes
  • 1 pinch of Salt
  • Dash of Tabasco
  • Pepper

Peel and remove the avocado stones. Mash with a potatoes masher. Sprinkle with lemon juice and stir. Chop the spring onions and dried tomatoes very finely. Add to the avocado’s and stir. Season to taste with salt, pepper and tabasco. Served chilled.

Courgette Sauté

Stir-fry Courgette

A lovely side dish that can also be added to rice or pasta for a complete meal.


Ingredients

  • 2 Courgettes
  • 1 Onions
  • 1 Bay leaf
  • 2 Garlic cloves
  • 100 ml of Extra Virgin Olive Oil
  • 20 gr of grated Parmesan Cheese
  • 1 pinch of Salt
  • Pepper

Cut the courgettes and onions into thin slices. Chop the garlic. Heat the olive oil. Add the onions, garlic and bay leaf. Let it turn golden. Add the courgettes and stir gently. Fry until the become soft and golden. Season with salt and pepper. Sprinkle the Parmesan and stir gently. Remove from the heat as soon as the cheese starts to melt.

Artichoke and Tomato Sauce

Artichoke and Tomato Sauce

Meditarean flavours are combined in this original tomato sauce.


Ingredients

  • 300 gr of Tomato
  • 1 Onion
  • 100 gr of cooked Artichokes
  • 50 gr of Black Olives
  • 2 tbsp of Extra Virgin Olive Oil
  • 1 tbsp of Tomato paste
  • 2 tbsp of Balsamic Vinager
  • Salt
  • Pepper
  • Chives

Peel the onion and cut into big chunks. Heat the olive oil and add the onion. Let it turn golden. Peel and remove the tomato seeds and cut into cubes. Add to the onion and let it simmer until soft. Add the tomato paste, balsamic vinegar and the artichokes cut into cubes. Stir and simmer for a couple of minutes. Season with salt and pepper. Remove from the heat. Add the olives and Chives and stir gently.

Tempura Green Beans

Tempura Green Beans

Delicious way to prepare green beans. Can be served hot or cold.


Ingredients

  • 300 gr of Green Beans
  • 3 tbsp of Flour
  • 1 Onion
  • 2 Garlic cloves
  • 3 Eggs
  • Salt
  • Pepper
  • 3 dl of Sunflower Oil

Boil a pot of water seasoned with coarse salt. Cook the beans for 5 minutes. Remove from the water and let it cool down. Mix the flour and eggs. Add the chopped garlic and onion. Season with salt and pepper. Add the beans and mix. Heat the oil in a frying pan. Pour in small portions of the beans and batter. Cook until golden brown.

Parmesan Cauliflower

Parmesan Cauliflower

Salty and sweet, this way to prepare cauliflower is as simple as it can be.


Ingredients

  • 1 Cauliflower head
  • 3 tbsp of Extra Virgin Olive Oil
  • 2 tbsp of grated Parmesan Cheese
  • Pepper

Break the cauliflower into florets ad cut those lengthwise in half. Cover a tray with baking paper. Place the cauliflower on the tray and drizzle with the olive oil. Sprinkle with freshly grounded pepper. Heat the oven to 200°C. Bake the cauliflower for 20 minutes. Remove the tray from the oven and sprinkle the grated cheese over the cauliflower. Lower the oven temperature to 180°C and bake the cauliflor for 5 to 10 minutes until golden brown.

Rainbow Chard Fritters

Rainbow Chard Fritters

Colour and delicious, this vegetable dish is sure to please even the most picky eaters.


Ingredients

  • 200 gr of Rainbow Chard
  • 1 Onion
  • 4 tbsp of Breadcrumbs
  • 3 tbsp of Parmesan Cheese
  • 1 tsp of Mustard powder
  • 1 tsp Cumin powder
  • 1 tbsp Coriander seeds
  • 1 tbsp of fresh chopped Coriander
  • 1 tbsp dried Garlic
  • 1 tsp of Chilli paste
  • 2 Eggs
  • 1 bunch of Dill
  • 2 tbsp of Extra Virgin Olive Oil
  • 1 pinch of Salt
  • Pepper

Boil a pot of water seasoned with coarse salt. Cook the Chard for 5 minutes. Remove from the water, drain and chop into small pieces. In a big bowl add all the ingredients. Mix well until it is well blend. Use your hands to form paties. Heat the olive oil and fry the paties until golden brown on both sides.

Carrots and Shallots Stir-fry

Deliciously sweet and crunchy carrots that go well as a side to any dish.


Ingredients

  • 300 gr of Carrots
  • 6 baby Onions
  • 1 Coriander Bunch
  • 1 Bay leaf
  • 2 tbsp of Extra Virgin Olive Oil
  • 1 pinch of Salt
  • Pepper

Peel the carrots and onion. Cut the carrots into sticks and then onions in half. Heat the olive oil. Add the bay leaf and onion and stir-fry for 2 minutes. Add the carrots and let it cook until it starts to gain colour, stiring often. Season with salt and pepper. Remove from the heat. Sprinkle with the chopped coriander.

Beetroot Mash

Ingredients

  • 3 Beetroots
  • 1 Potato
  • 1 tbsp Mayonnaise
  • 2 tbsp of Guerkin preserve liquid
  • 1 pinch of Salt
  • Pepper

Boil a pot of water seasoned with coarse salt. Peel the beetroot and potatoes. Cook in the boiling water until soft. Drain and mash with a potato masher. Season with salt and pepper. Add the mayonnaise and gherkin liquid and stir.

  • 200 gr of Spinach
  • 2 Garlic cloves
  • 1 Bay leaf
  • 2 tbsp of Extra Virgin Olive Oil
  • 2 tbsp of Vinegar
  • 1 pinch of Salt
  • Pepper

Boil a pot of water seasoned with coarse salt. Cook the spinach for 5 minutes. Drain an Chop finely. Peel the garlic and chop in small pieces. Heat the olive oil and add the garlic and bay leaf. Let the garlic turn golden brown and add the spinach. Stir and let it cook for a few minutes. Season with salt and pepper. Add the vinegar and stir.
