Battered Pineapple

A fried fruit desert or treat with a delightful juicy sweetness…


Ingredients

  • 1/2 cup Flour
  • 1 tsp Baking Powder
  • 2 tbsp demerara Sugar
  • 2 eggs
  • 2 tbsp Creme Fraiche
  • 1 tbsp Lemon juice
  • 1 tbsp melted Butter
  • 1 Pineapple
  • Sunflower Oil

Peel the pineapple and cut it into cubes. In a bowl, whisk the eggs and sugar. Add the remaining ingredients and whisk until it is all blended into a smooth batter. Add the pineapple to the batter and gently mix it. Heat the oil. Spoon the pineapple chunk in small batches. Fry until golden brown.

Grape Jam

If you like grapes, this is the perfect jam! Can be eaten on its own or use in cakes and desserts.


Ingredients

  • 1 kg mixed seedless Grapes
  • 1300 gr demerara Sugar
  • 1 tbsp of Lemon juice
  • 1 Cinnamon stick

Place the grapes on a large saucepan and cover with the sugar. Let it rest for about 15 minutes. Turn on the heat on a low setting. Pour in the lemon juice and stir. Add the cinnamon stick.

Stir frequently and let it simmer on low heat. Scoop out the foam from the top and keep stirring until the fruit becomes soft and you can create clear path in the middle of the pan using a woden spoon. Turn off the heat. Depending on the size of the grapes this process can take between 30 minutes and 1 hour. Let the jam cool down in the pan. Pour into containers and it’s ready to serve. Can be kept in the fridge in a closed container for several days.

Eggless Fruit Cake

Ingredients

  • 115 gr of Flour
  • 1 tsp of Baking Soda
  • 1 tsp of Baking Powder
  • 1/4 tsp of Salt
  • 2 tbsp of Molasses
  • 1 tsp of Cinnamon
  • 1 tsp of Aniseed powder
  • 40 grs of Orange candied peel
  • 40 grs candied Cherries
  • 40 grs of Almonds
  • 40 grs of Pistachios
  • 20 grs of Sultanas
  • 20 grs of Goji berries
  • Black Tea
  • Oil spray

Prepare a strong black tea brew. Cover the candied fruits, sultanas and goji berries with the tea and let it soak for about one hour. Heat the oven to 170°C. Mix the flour with the baking powder and baking soda. Add the cinnamon and aniseed powder. Drain the fruits and pat dry with a paper towel. Keep tea on the side. Chop coarsly the soaked fruits, pistachios and almonds. Add the molasses and all the fruits to the flour mix. Whisk and add a little bit of tea if it is too dry. The dough should be thick but quite moist.
Cover a rectangular cake tin with baking paper. Spray with oil and sprinkle with a little bit of flour. Pour in the cake mix and flatten the top gently. Bake for 30 to 40 minutes until golden on top and firm to touch. Let it cool down inside the tin. Slice gently and keep in a biscuit tin.

Creamy Baked Apples

Custard Baked Apples

A low sugar recipe that will make the fussiest eaters fall in love with apples.


Ingredients

  • 6 gr Apples
  • 1 Cinnamon stick
  • 80 gr of roughly chopped Almonds
  • 60 gr of salted Butter
  • 60 gr of demerara Sugar
  • 3 tbsp of Flour
  • 9 tbsp of Milk

Peel the apples, cut into quarters, place them in a pan and cover with water. Add the cinnamon and bring to boiling point. Lower the heat and simmer until the apples are soft. Drain the apples and keep them on the side.

In a pan melt the butter, add the sugar and flour and stir quickly. Pour in the milk and and stir constantly on a low heat until it becomes a thick cream.

Heat the oven to 180 degrees celsius. Grease a baking tray. Place the apples on the tray and cover with the cream. Place in the oven for 15 minutes. Sprinkle the almonds on top and bake until it turns golden brown. Serve warm.

Poached Pears in Madeira Wine

Ingredients

  • 4 Pears
  • 1 Cinnamon Stick
  • 2 tbsp of Demerara Sugar
  • Madeira Wine

Peel the pears. Place in a pot and cover with the wine. Add the cinnamon and sugar. Stir gently. Simmer on low heat until the pears are soft. Place in the plate and pour some of the liquid over the fruit. Serve with clotted cream or vanilla ice-cream.

  • 110 gr of grated Courgette
  • 125 gr of Flour
  • 1 tsp Baking Powder
  • 1/8 tsp Baking Soda
  • 1/2 tsp of Salt
  • 1/2 tsp of Cinnamon powder
  • 2 Eggs
  • 125 ml Sunflower Oil
  • 115 gr of Sugar
  • 75 gr of Chopped Walnuts

Combine the eggs, oil and sugere. Whisk well. Add the flour, baking powder, baking soda and cinnamon. Mix well. Add the courgette and walnuts. Pre-heat the oven to 180°C. Grease a rectangular tin. Sprinkle with flour and pour in the cake mix. Bake for 45 minutes.

Ingredients

  • 4 Bananas
  • 1 cup of Maple Syrup
  • 1/4 cup of water
