Battered Pineapple

A fried fruit desert or treat with a delightful juicy sweetness…


Ingredients

  • 1/2 cup Flour
  • 1 tsp Baking Powder
  • 2 tbsp demerara Sugar
  • 2 eggs
  • 2 tbsp Creme Fraiche
  • 1 tbsp Lemon juice
  • 1 tbsp melted Butter
  • 1 Pineapple
  • Sunflower Oil

Peel the pineapple and cut it into cubes. In a bowl, whisk the eggs and sugar. Add the remaining ingredients and whisk until it is all blended into a smooth batter. Add the pineapple to the batter and gently mix it. Heat the oil. Spoon the pineapple chunk in small batches. Fry until golden brown.

Roasted Crushed Potatoes

Delicious! Crispy on the outside and fluffy inside…


Ingredients

  • 500 gr baby Potatoes
  • 8 Garlic cloves
  • 1 Bay leaf
  • 1/4 cup of Extra Virgin Olive Oil
  • Rosemary sprigs
  • Himalaya Salt
  • Pepper

In a big pot with salted water, boil the potatoes for 10 minutes. Oil the bottom of a baking tray and place the potatoes on the oil. Crash each potato and add the garlic cloves with peel on. Drizzle the remaining oil over the potatoes. Sprinkle with salt and pepper. Spread the sprigs of rosemary over the top. Bake in hot oven (220°C) for about 40 min.

Lemon and Basil Rice

Fresh and tangy rice that goes with everything…


Ingredients

  • 1 cup of Rice
  • 2 tbsp Olive Oil
  • 1 tbsp chopped Parsley
  • 1 bunch chopped Basil
  • 1 Lemon zest
  • 300 ml vegetable Stock
  • 25 gr grated Parmesan
  • Salt
  • Pepper

Heat the olive oil. Add the rice and stir until it becomes translucid. Add the parsley, basil and lemon zest.Stir to combine. Pour in the stock and season with salt and pepper. Cover with a lid and lower the heat. Cook for approximately 15 minutes. Remove from the heat and add the grated parmesan. Stir and serve straight away.

Parmesan Omelette

A tasty omelette that is ready in no time… For those evenings when you are too tired to decide what to cook.


Ingredients

  • 4 eggs
  • 1 tbsp Soy sauce
  • 1/4 cup grated Parmesan
  • 2 tbsp chopped Parsley
  • 1 tsp Chilli flakes
  • Pepper
  • 2 tbsp Olive oil

Whisk the eggs. Season with the soy sauce, pepper and chilli flakes. add the chopped parsley and grated parmesan. In a large frying pan, heat the olive oil. Pour in the eggs and swirl to spread the eggs into a pancake shape. Cook for abour 3 minutes until it starts to solidify. Gently lift the sides with a spatula and fold one third into the middle, then again over the other third. slide into a serving plate.

Black Spaghetti with Cockles

Visually impressive, black spaghetti is also mouth wateringly good.


Ingredients

  • 200 gr black Spaghetti
  • 200 gr cooked Cockles
  • 1 Courgette
  • 1 Onion
  • 1 Bay leaf
  • 2 Garlic cloves
  • 100 ml of Extra Virgin Olive Oil
  • 200 ml pasta cooking water
  • 50 gr Samphire
  • 1/2 Fennel bulb
  • 1 stalk of Celery
  • 2 tbsp of Creme Fraiche
  • 40 gr of grated Parmesan Cheese
  • 1 pinch of Salt
  • Pepper

Cook the pasta in boiling salted water for the time recommended on the pack. Take out 200 ml of the cooking water and drain the rest. Reserve the pasta on the side. Peel and cut into thin slices the onions, the celery, the fennel, garlic and courgettes. Heat the olive oil. Add the onions, celery, fennel, garlic and bay leaf. Let it turn golden. Add the courgettes and stir gently. Fry until they become soft and golden. Season with salt and pepper. Add the samphire and cook for 2 minutes. Add the pasta and cockles and stir well. Add the cooking water and the creme fraiche and stir until it becomes a creamy sauce. Add the grated parmesan cheese and fold gently. Remove from the heat. Sprinkle chopped parsley, fresh oregano and some more parmesan. Serve immediately.

Poached Pears in Madeira Wine

Stewed Pears in Marsala Wine

Sweet, soft and smooth, this is a winning desert at any dinner party.


Ingredients

  • 4 Pears
  • 1 Cinnamon Stick
  • 2 tbsp of Demerara Sugar
  • Madeira Wine

Peel the pears. Place in a pot and cover with the wine. Add the cinnamon and sugar. Stir gently. Simmer on low heat until the pears are soft. Place in the plate and pour some of the liquid over the fruit. Serve with clotted cream or vanilla ice-cream.

Guacamole

A party favourite that can be served as dip, side or sauce.


Ingredients

  • 2 Avocados
  • 1 Lemon
  • 3 Spring Onions
  • 3 dried Tomatoes
  • 1 pinch of Salt
  • Dash of Tabasco
  • Pepper

Peel and remove the avocado stones. Mash with a potatoes masher. Sprinkle with lemon juice and stir. Chop the spring onions and dried tomatoes very finely. Add to the avocado’s and stir. Season to taste with salt, pepper and tabasco. Served chilled.

Baked Potatoes with Cottage Cheese

Ricotta Stuffed Baked Potatoes

Creamy but healthy, this potatoes are delicious and easy to prepare.


Ingredients

  • 2 large baked Potatoes
  • 250 gr cottage Cheese
  • 1 Spring Onions
  • Chives
  • 1 pinch of Salt
  • Pepper

Slice each potato in half lengthwise. With a teaspoon carefully remove the potato pulp and place in a bowl. Add the cottage cheese and mash until smooth and creamy. Season with salt and pepper and sprinkle with finely chopped chives. Mix well. Fill each half potato wild the mash. Sprinkle with pepper and serve.

Courgette Sauté

Stir-fry Courgette

A lovely side dish that can also be added to rice or pasta for a complete meal.


Ingredients

  • 2 Courgettes
  • 1 Onions
  • 1 Bay leaf
  • 2 Garlic cloves
  • 100 ml of Extra Virgin Olive Oil
  • 20 gr of grated Parmesan Cheese
  • 1 pinch of Salt
  • Pepper

Cut the courgettes and onions into thin slices. Chop the garlic. Heat the olive oil. Add the onions, garlic and bay leaf. Let it turn golden. Add the courgettes and stir gently. Fry until the become soft and golden. Season with salt and pepper. Sprinkle the Parmesan and stir gently. Remove from the heat as soon as the cheese starts to melt.
