Whelks Salad

Unriveled seafood, whelks are the jewels of the sea with a fresh flavour and distinct texture …


Ingredients

  • 200g cooked Whelk
  • 1 Onion
  • 1 Parsley bunch
  • 1/4 cup mixed Pickkes
  • 1/4 cup Olive oil
  • Pepper
  • Salt
  • 4 tbsp White Wine Vinager

Chop the onions, garlic, parsley and pickles. Prepare the whelks by removing the inner black tube and cutting into small pieces. Add to tge onion mix. Season with salt and pepper. Add the olive oil and vinager. Mix it all in a bowl cover with cling film and keep in the refrigerator.

Creamy Mussel and Corn Chowder

A hearty soup full of flavours. Unlike most traditional chowders this recipe doesn’t include bacon.


Ingredients

  • 1 kg fresh Mussels
  • 50 gr Corn kernels
  • 4 Potatoes
  • 1 yellow Onion
  • 1 red Onion
  • 1 Bay leaf
  • 2 Garlic cloves
  • 1 Ginger cube
  • 1 Leek
  • 1 Fennel bulb
  • 100 ml of Extra Virgin Olive Oil
  • 500 ml white Wine
  • 150 ml Creme Fraiche
  • Chives
  • Coriander
  • Salt
  • Pepper

Clean the mussels thouroughly. Cut the white onion into thin slices and place on a deep pan with 1 tbsp of olive oil. Heat the oil and add the mussels. Cover with a lid and let it steam on a low heat until the mussel shells open. Stir frequently. Turn off the heat and discard the mussels with closed shells. Reserve a few mussels with shell on for decoration and remove the shell from the rest. Set aside. Keep the liquid and onions to use later.

In a saucepan place the chopped red onion, thin slices of fennel, leek and garlic. Add the remaining olive oil and stir fry until the onion is translucid. Add the corn kernels and the potatoes cut into small cubes. Let it cook for a few minutes whilst stiring. Add liquid and onion from cooking the mussels and the white wine. Bring to the boil then lower the heat and cook until the potatoes are soft, about 15 minutes. Remove from the heat and scoop out the potatoes and some corn kernels. Set aside. Blend the remaining content of the sauce pan until it become a creamy mixture.

Place the blended mixture in the saucepan and add the mussels meat. Cook for about 10 minutes. Add the potatoes and corn kernels and cook for another 5 minutes. Add the creme fraiche and stir gently. Turn off the heat and season with freshly grounded pepper and sprinkle with chopped chives and coriander. Serve immediately.

Black Spaghetti with Cockles

Visually impressive, black spaghetti is also mouth wateringly good.


Ingredients

  • 200 gr black Spaghetti
  • 200 gr cooked Cockles
  • 1 Courgette
  • 1 Onion
  • 1 Bay leaf
  • 2 Garlic cloves
  • 100 ml of Extra Virgin Olive Oil
  • 200 ml pasta cooking water
  • 50 gr Samphire
  • 1/2 Fennel bulb
  • 1 stalk of Celery
  • 2 tbsp of Creme Fraiche
  • 40 gr of grated Parmesan Cheese
  • 1 pinch of Salt
  • Pepper

Cook the pasta in boiling salted water for the time recommended on the pack. Take out 200 ml of the cooking water and drain the rest. Reserve the pasta on the side. Peel and cut into thin slices the onions, the celery, the fennel, garlic and courgettes. Heat the olive oil. Add the onions, celery, fennel, garlic and bay leaf. Let it turn golden. Add the courgettes and stir gently. Fry until they become soft and golden. Season with salt and pepper. Add the samphire and cook for 2 minutes. Add the pasta and cockles and stir well. Add the cooking water and the creme fraiche and stir until it becomes a creamy sauce. Add the grated parmesan cheese and fold gently. Remove from the heat. Sprinkle chopped parsley, fresh oregano and some more parmesan. Serve immediately.

Mussels Pasta

Mussels and green bean pasta

Ingredients

  • 200 gr of Penne pasta
  • 250 gr cooked and frozen Mussels
  • 1 Onion
  • 2 Garlic cloves
  • 1 Bay leaf
  • 50 gr of Green Beans
  • 1 Coriander Bunch
  • 2 tbsp of Extra Virgin Olive Oil
  • 2,5 dl of White Wine
  • 1 pinch of Salt
  • Pepper

Peel the onion and garlic and chop finely. Heat the olive oil. Add the onion, garlic and bay leaf. Let the garlic and onion gain a bit of colour. Add the Mussel, stir and fry for about 2 minutes. Season with salt and pepper and add the wine and bring to boil. Add the green beans and let it cook for 5 minutes. Add the penne and cook for 10 minutes. Sprinkles with the chopped coriander.

Red Shrimp

This dark thick sauce blends with the flavour of the shrimps creating an intense distinctive dish.


Ingredients

  • 300 gr of Shrimp
  • 1 Onion
  • 4 Garlic cloves
  • 2 tbsp of Extra Virgin Olive Oil
  • 1/2 tsp of Salt
  • 1 tbsp of Paprika
  • 1 tsp of Tabasco
  • 1 cup of White Wine
  • 1 cup of Vegetable Stock
  • 1 tbsp of Parsley

Peel and slice the onion. Heat the olive oil and fry the onion until it is translucent. Chop the garlic finely and add to the onion. Cook for 2 minutes. Add the shrimp and cook until it becomes bright pink. Add the paprika, stir and pour in a bit of the vegetable stock. Let it simmer for a few minutes. Add the wine and wait until it boils. Add the tabasco and let it simmer slowly until the wine starts to evaporates and the sauce thickens.

Squid Bean Stew

Ingredients

  • 500 gr tin of White Beans
  • 300 gr of Squid
  • 3 Garlic cloves
  • 1 Coriander Bunch
  • 2 Spring Onions
  • 3 tbsp of Extra Virgin Olive Oil
  • 4 tbsp Tomato paste
  • 2 small chillies
  • 1 pinch of Salt
  • Pepper

Heat the olive oil. Chop the garlic and fry until golden brown. Clean the squid and cut into pieces. Add it to the garlic and let it cook until soft. Add the beans and the liquid from the tin. Bring to boil and add the tomato paste. Stir and season with salt and pepper. Simmer for 15 minutes in low heat. Stir every now and again. Remove from the heat. Sprinkle with chopped spring onions and coriander.

Scallops and Asparagus Stir-fry

Scallops and Asparagus Stir-fry

A guaranteed winner for seafood lovers. So simple and quick to prepare but so delicious it might make you cry over the empty plate.


Ingredients

  • 300 gr of Scallops
  • 200 gr of Asparagus
  • 4 Garlic cloves
  • 2 tbsp of Extra Virgin Olive Oil
  • 2 tbsp of Marsala Wine
  • 1 tbsp of Soy sauce
  • 1 tbsp Oyster sauce
  • Pepper
  • Chives

Chop the garlic. Cut the asparagus in big pieces. Heat up the olive oil. Add the garlic and fry until golden. Add the scallops. Fry for a couple of minutes then turn around and fry for another two minutes. Add the asparagus and stir. Add the marsala wine and simmer for a few minutes. Add the soy and oyster sauce, stir and remove from the heat. Sprinkle with chopped chives.

Oysters au Gratin

Oysters au Gratin

If don’t like the texture of raw oysters you should try this recipe. Amazing flavour but none of the squidgyness that puts off so many people.


Ingredients

  • 12 Oysters
  • 50 gr of Garlic
  • 50 gr of Butter
  • 50 gr of Breadcrumbs
  • 3 tbsp of chopped Parsley
  • 2 tbsp of grated Parmesan

Prepare the oysters. Open the shell and remove the top. Place in a tray. Crush the garlic and add to the breadcrumbs and parsley. Melt the butter and add to the breadcrumbs mix. Finally add the grated cheese and stir into a paste. Cover each oyster with the breadcrumbs paste. Sprinkle with some more grated cheese. Cook in a pre-heated oven at 200°C until the top is golden brown.

Shrimp and Baby Potatoes Stir-Fry

Shrimp and Baby Potatoes Stir-Fry

Few ingredients and a simple cooking process but so amazingly tasty you will want to do it all the time. Great for packed lunches or picnics.


Ingredients

  • 300 gr of Shrimp
  • 250 baby Potatoes
  • 3 Garlic cloves
  • 1 Bay leaf
  • 1 Coriander Bunch
  • 2 tbsp of Extra Virgin Olive Oil
  • 1 pinch of Salt
  • 1 pinch of Pepper

Boil a pot of water seasoned with coarse salt. Cook the potatoes for 10 minutes. Remove from the water and let it cool down. Add the shrimp in the boiling water and cook for 5 minute. Drain and peel the shrimp and reserve. Peel the garlic and slice it. Heat the oil in a frying pan. Add the garlic and bay leaf. When the garlic becomes golden add the shrimps. Stir often for about 5 minutes. Add the pototoes and season with salt and pepper. Stir for another 5 minutes. Remove from the heat and sprinkle with chopped coriander.

Asian Cockles Soup

Asian style clear soup with Udon noodles, cockles and coriander.


Ingredients

  • 100 gr of cockles (de-shelled)
  • 500 ml vegetable stock
  • 2 Spring Onions
  • 1 Coriander Bunch
  • 50 gr bean sprouts
  • 1 pinch of Salt
  • Pepper
  • Udon Noodles (pre-cooked)

Bring the fish stock to boil and add chopped coriander. Boil for a few minutes and add a pinch of salt, pepper and the cockles. Boil for 5 minutes until the cockles are cooked. Add the bean sprout and the noodles. Simmer for 2 minutes. Remove from the heat and add the chopped spring onions and coriander.
