Lemon and Basil Rice

Fresh and tangy rice that goes with everything…


Ingredients

  • 1 cup of Rice
  • 2 tbsp Olive Oil
  • 1 tbsp chopped Parsley
  • 1 bunch chopped Basil
  • 1 Lemon zest
  • 300 ml vegetable Stock
  • 25 gr grated Parmesan
  • Salt
  • Pepper

Heat the olive oil. Add the rice and stir until it becomes translucid. Add the parsley, basil and lemon zest.Stir to combine. Pour in the stock and season with salt and pepper. Cover with a lid and lower the heat. Cook for approximately 15 minutes. Remove from the heat and add the grated parmesan. Stir and serve straight away.

Wild Mushrooms Risotto

Wild Mushrooms Risotto

The red wine gives it an intense flavour and colour.


Ingredients

  • 100 gr of Wild Mushrooms
  • 2 Garlic cloves
  • 2 tbsp of Extra Virgin Olive Oil
  • 160 gr arborio Risotto
  • 2,5 dl Red Wine
  • 2,5 dl Vegetable Stock
  • 1 tbsp Tomato Paste
  • 2 tbsp grated Parmesan cheese
  • 1 Bunch of Parsley
  • 1 pinch of Salt
  • Pepper

Peel and chop the garlic. Heat the olive oil and add the Bay leaf. Fry the garlic until golden. Add the rice and stir until it becomes translucent. Pour in the wine and let it boil. Turn down the heat and simmer for 10 minutes. Stir occasionally and add the vegetable stock bit by bit. Add the mushrooms and cook for a few more minutes, stirring frequently. Add the tomato paste and the parsley cut finely. Season with salt and pepper. Stir for another 2 minutes. Turn off the heat and add the grated parmesan. Stir and serve.

Creamy Rice Pudding

Creamy Rice Pudding

Delicious creamy dessert. Can be serve warm but it is at it’s best straight out of the fridge. Cinnamon gives it a special touch.


Ingredients

  • 75 gr of Shrimp
  • 1 lt of Milk
  • 80 gr of Sugar
  • 1 Lemon peel
  • 1 Cinnamon Stick
  • Cinnamon powder
  • 4 Eggs
  • Salt

Place the rice in a pot and cover with water. Add a pinch of salt, the lemon peel and the cinnamon stick. Cook until the water evaporates. Heat up the milk and add to the rice slowly. Add the sugar and stir. Bring to boil and simmer for 2 minutes. Remove from the heat. Let it cool down. Remove the lemon peel and the cinnamon stick. Add the yolks and stir until it blends. Put back on the heat and stir until it thickens. Pour into a bowl and sprinkle with cinnamon powder. Let it cool down and place in the fridge.

Garlic Rice

Garlic Rice

An amazing rice perfect for garlic lovers. Goes well with most dishes and can be re-heated or used in fried rice dishes the next day.

  • 185 gr of arborio Rice
  • 4 Garlic cloves
  • 1 Bay leaf
  • 100 ml of Extra Virgin Olive Oil
  • 2 cups of Water
  • 1 pinch of Salt

Heat the olive oil. Chop the garlic and fry until golden. Add the rice and stir until it becomes translucent. Add the water and the salt. Cover with a lid and let it simmer until the water evaporates. Stir regularly. It normally takes about 15 minutes.
