Scallops and Asparagus Stir-fry

A guaranteed winner for seafood lovers. So simple and quick to prepare but so delicious it might make you cry over the empty plate.


Ingredients

  • 300 gr of Scallops
  • 200 gr of Asparagus
  • 4 Garlic cloves
  • 2 tbsp of Extra Virgin Olive Oil
  • 2 tbsp of Marsala Wine
  • 1 tbsp of Soy sauce
  • 1 tbsp Oyster sauce
  • Pepper
  • Chives

Chop the garlic. Cut the asparagus in big pieces. Heat up the olive oil. Add the garlic and fry until golden. Add the scallops. Fry for a couple of minutes then turn around and fry for another two minutes. Add the asparagus and stir. Add the marsala wine and simmer for a few minutes. Add the soy and oyster sauce, stir and remove from the heat. Sprinkle with chopped chives.

Lettuce with Mustard Dressing

A simple salad with cashew and pinenuts for extra protein, drizzled with a delicious mustard dressing. Irresistible on a hot summer day.


Ingredients

  • 1 mixed Lettuce leaf salad bag
  • 6 tbsp of Extra Virgin Olive Oil
  • 1 tbsp of Balsamic vinegar
  • 1 tbsp of Lemon juice
  • 1 tbsp of Mustard
  • 1 Garlic clove
  • 2 tbsp of roasted Cashew nuts
  • 1 tbsp of Pinenuts
  • 1 tbsp of dried fried Onion

Place the lettuce leafs on a salad bowl. Crash the garlic and place in a blender. Add the olive oil, balsamic vinegar, lemon juice and mustard and blend until smooth. Pour over the lettuce and stir gently. Sprinkle the cashews, pinenuts, dried onion and serve.

A perfect side dish with oriental inspiration. Nutritionally rich, these greens make a plate vibrant with colour and great taste.


Ingredients

  • 2 Bok Choy Cabbages
  • 1 Asparagus bunch
  • 2 Garlic cloves
  • 2 tbsp of Extra Virgin Olive
  • 1 tbsp Soy Sauce
  • 1 tbsp Oyster Sauce

Cut the bok choi and the asparagus into big chunks. Heat up the olive oil and add the chopped garlic. When the garlic gains a bit of colour add the bok choi and asparagus. Stir-fry for a few minutes. Add the soy and oyster sauce and stir to blend it. Remove from heat and serve hot.

Tomato and Pinenut Salad

Tomato and Pinenut Salad

A refreshing fusion of typical Mediterranean ingredients with a sprinkle of fried onions.


Ingredients

  • 150 gr of cherry Tomatoes
  • 25 gr of Pinenuts
  • 1 Bunch Basil leafs
  • 2 tbsp of Extra Virgin Olive Oil
  • 2 tbsp dried fried onions
  • 1 tbsp glazed Balsamic Vinager
  • Himalaya Salt
  • Pepper

Cut the cherry tomatoes in half and place in a salad bowl. Top with the basil leafs. Sprinkle with the pinenuts and fried onions. Season with salt and pepper. Drizzle with olive oil and balsamic glaze.

Nordic Fish Soup

Inspired by tradicional Nordic fish soups. A few twists make this soup as delicious as the original but more nutrionally balanced.


Ingredients for the Fish stock

  • 100 gr of white Fish
  • 500 ml Water
  • 2 Garlic cloves
  • 1 Bay Leaf
  • 1 Celery stalk
  • 1 pinch of Salt
  • 1 tbsp Pepper corns

Ingredients for the Soup

  • 1 Red Onion
  • 1/2 Fennel bulb
  • 2 Celery stalks
  • 1 Bay Leaf
  • 2 tbsp of Extra Virgin Olive Oil
  • 200 gr baby Potatoes
  • 2 Carrots
  • 4 Tomatoes
  • 200 ml Fish stock
  • 1 Parsley bunch
  • 50 ml Crème Fraiche
  • Dill

Start by preparing the fish stock. Pour 500 ml of water in a pan. Add a bay leaf, the garlic, one celery stalk, one carrot, a handful of peppercorns, a pinch of coarse sea salt and bring to boil. When the water is boiling add the fish and cook for 10 minutes. Remove the fish, strain the stock liquid and reserve. Peel the onion, carrots, potatoes and tomatoes. Cut the onion, celery and fennel in big chunks. Heat up the olive oil. Add the onion, fennel and bay leaf. Fry until the onions turn golden. Add the potatoes and carrots cut into small cubes. Stir fry for a few minutes. Add the chopped tomatoes and carry on stiring for another 5 minutes. Add the wine an the fish stock and let it cook until the potatoes are ready. Remove from the heat. Add the creme fraiche and sprinkle with chopped parsley. Stir well and add the spinach leafs. Plate the fish and pour the soup over it. Top with a dill stalk.
