Roasted Crushed Potatoes

Ingredients

  • 500 gr baby Potatoes
  • 8 Garlic cloves
  • 1 Bay leaf
  • 1/4 cup of Extra Virgin Olive Oil
  • Rosemary sprigs
  • Himalaya Salt
  • Pepper

In a big pot with salted water, boil the potatoes for 10 minutes. Oil the bottom of a baking tray and place the potatoes on the oil. Crash each potato and add the garlic cloves with peel on. Drizzle the remaining oil over the potatoes. Sprinkle with salt and pepper. Spread the sprigs of rosemary over the top. Bake in hot oven (220°C) for about 40 min.

Ingredients

  • 2 large baked Potatoes
  • 250 gr cottage Cheese
  • 1 Spring Onions
  • Chives
  • 1 pinch of Salt
  • Pepper

Slice each potato in half lengthwise. With a teaspoon carefully remove the potato pulp and place in a bowl. Add the cottage cheese and mash until smooth and creamy. Season with salt and pepper and sprinkle with finely chopped chives. Mix well. Fill each half potato wild the mash. Sprinkle with pepper and serve.

  • 500 gr of Potatoes
  • 300 ml Creme Fraiche
  • 200 ml Milk
  • 2 Garlic cloves
  • 1 Bay leaf
  • Nutmeg
  • 1 pinch of Salt
  • Pepper

Ingredients

Cut the potatoes into thin slices and place in a pot. Cover with the creme fraiche and milk, season with salt, add the crushed garlic and bay leaf. Bring to boil and cook for 10 minutes. Remove the bay leaf and season with pepper and nutmeg. Transfer into a baking tray. Heat the oven to 200°C. Bake for 25 minutes or until golden brown.

Ingredients

  • 400 gr of Potatoes
  • 1 Broccoli head
  • 2 tbsp of Mayonese
  • 2 tbsp of Guerkins liquid
  • 1 pinch of Salt
  • 1 pinch of fresh grounded Nutmeg
  • Pepper

Bring a pot of water to boil. Season with salt. Peel and chop the potatoes into cubes. Cut the broccoli in florets. Cook the brocolli and potatoes in the boiling water. Drain and mash. Add the mayonnaise and gherkin liquid. Season with pepper and nutmeg. Stir until smooth.

Ingredients

  • 2 Tuna tins
  • 400 gr of Potatoes
  • 50 gr of Olives
  • 4 Eggs
  • 100 ml of Extra Virgin Olive Oil
  • 1 Lemon
  • 1 Parsley bunch
  • 1 tbsp of Flax Seeds
  • 1 pinch of Salt
  • Pepper

Boil a pot of water seasoned with coarse salt. Cook the potatoes for 15 to 20 minutes. Remove from the water and let it cool down. Cook the eggs in boiling water for 15 minutes. In a blender place the olive oil, lemon and season with salt and pepper. Blend until it becomes a thick sauce. Cut the potatoes into cubes and place in a bowl. Add the tuna in chunks and the olives. Peel and cut the egg into quarters. Place in the bowl. Drizzle with the sauce and stir gently. Sprinkle with the flax seeds and decorate with parsley.

Shrimp and Baby Potatoes Stir-Fry

Shrimp and Baby Potatoes Stir-Fry

Few ingredients and a simple cooking process but so amazingly tasty you will want to do it all the time. Great for packed lunches or picnics.


Ingredients

  • 300 gr of Shrimp
  • 250 baby Potatoes
  • 3 Garlic cloves
  • 1 Bay leaf
  • 1 Coriander Bunch
  • 2 tbsp of Extra Virgin Olive Oil
  • 1 pinch of Salt
  • 1 pinch of Pepper

Boil a pot of water seasoned with coarse salt. Cook the potatoes for 10 minutes. Remove from the water and let it cool down. Add the shrimp in the boiling water and cook for 5 minute. Drain and peel the shrimp and reserve. Peel the garlic and slice it. Heat the oil in a frying pan. Add the garlic and bay leaf. When the garlic becomes golden add the shrimps. Stir often for about 5 minutes. Add the pototoes and season with salt and pepper. Stir for another 5 minutes. Remove from the heat and sprinkle with chopped coriander.

  • 300 gr of Crab (brown and white meat)
  • 400 gr of baby Potatoes
  • 3 Garlic cloves
  • 1 tsp Chilli paste
  • 1 Bay leaf
  • 2 tbsp of Extra Virgin Olive Oil
  • 2 tbsp Marsala Wine
  • 1 pinch of Salt
  • 1 bunch of Parsley

Boil a pot of water seasoned with coarse salt. Cook the potatoes with the peel on for 10 minutes. Remove from the water. Warm the olive oil in a shallow pan. Add the chrushed garlic, bay leaf and chili paste. Stir and add the wine and the brown crab meat. Stir until it all blends. Remove from the heat. Add the baby potatoes and stir. Sprinkle with chopped parsley and place the white crab meat on top.
