Stir-fry Cherry Tomatoes

Couldn’t be any simpler, yet the amazing taste these tomatoes gain during the cooking is quite surprising.


Ingredients

  • 150 gr of cherry Tomatoes
  • 2 tbsp of Extra Virgin Olive Oil
  • 1 tbsp of Balsamic vinegar
  • Fresh Thyme

Heat up the olive oil in a shallow pan. Add the tomatoes and keep stirring for a few minutes. Sprinkle the balsamic vinegar. Stir and remove from the heat. Sprinkle with fresh thyme.

A super easy and tasty way to eat cabbage. It is great as a side dish but with just a few ingredients added can turn into a one pot meal.


Ingredients

  • 1/2 Savoy Cabbage
  • 1 Onion
  • 2 Garlic cloves
  • 3 tbsp of Extra Virgin Olive Oil
  • 1 Bay leaf
  • 1 cup of Water
  • 1 pinch of Salt
  • Pepper

Cut the cabbage into big chunks. Peel the onion and garlic. Slice the onion and chop the garlic. Heat the olive oil. Add the onion, garlic and bay leaf. Stir-fry until golden. Add the cabbage and stir until it wilts. Season with salt and pepper. Stir for a few minutes until it gains some colour. If necessary add a little bit of water to avoid it sticking to the bottom of the pan.

Scallops and Asparagus Stir-fry

Scallops and Asparagus Stir-fry

A guaranteed winner for seafood lovers. So simple and quick to prepare but so delicious it might make you cry over the empty plate.


Ingredients

  • 300 gr of Scallops
  • 200 gr of Asparagus
  • 4 Garlic cloves
  • 2 tbsp of Extra Virgin Olive Oil
  • 2 tbsp of Marsala Wine
  • 1 tbsp of Soy sauce
  • 1 tbsp Oyster sauce
  • Pepper
  • Chives

Chop the garlic. Cut the asparagus in big pieces. Heat up the olive oil. Add the garlic and fry until golden. Add the scallops. Fry for a couple of minutes then turn around and fry for another two minutes. Add the asparagus and stir. Add the marsala wine and simmer for a few minutes. Add the soy and oyster sauce, stir and remove from the heat. Sprinkle with chopped chives.

Shrimp and Baby Potatoes Stir-Fry

Shrimp and Baby Potatoes Stir-Fry

Few ingredients and a simple cooking process but so amazingly tasty you will want to do it all the time. Great for packed lunches or picnics.


Ingredients

  • 300 gr of Shrimp
  • 250 baby Potatoes
  • 3 Garlic cloves
  • 1 Bay leaf
  • 1 Coriander Bunch
  • 2 tbsp of Extra Virgin Olive Oil
  • 1 pinch of Salt
  • 1 pinch of Pepper

Boil a pot of water seasoned with coarse salt. Cook the potatoes for 10 minutes. Remove from the water and let it cool down. Add the shrimp in the boiling water and cook for 5 minute. Drain and peel the shrimp and reserve. Peel the garlic and slice it. Heat the oil in a frying pan. Add the garlic and bay leaf. When the garlic becomes golden add the shrimps. Stir often for about 5 minutes. Add the pototoes and season with salt and pepper. Stir for another 5 minutes. Remove from the heat and sprinkle with chopped coriander.
